If we are talking ice cream; it depends. I like to cook and eat seasonally, so when it is strawberry season, I make strawberry ice cream, same with rhubarb and peach seasons. If I am just buying ice cream, then I cannot resist a vanilla base with swirls of fudge and caramel.
