Dec. 18th, 2022 01:30 pm18. December 18 is "Bake Cookies Day". Do you have a favourite cookie recipe? Care to share?
The simple answer is no; I bake a good amount and during the holidays make 7-8 different cookies/bars and candy to give as gifts. The favorite cookie of everyone else is a chewy chocolate from Cook's Illustrated that I tweak a little to make my own.
During the rest of the year, when I get in the mood for a cookie, I tend to gravitate towards some version of chocolate chip. When I am feeling the need, I have loved Stella Parks' riff on Levain's big cookie: https://www.seriouseats.com/super-thick-chocolate-chip-cookie-recipe
I toast the sugar and also throw in some toffee bits. I keep the unbaked balls (wrapped in plastic) in the fridge until I am ready to have one and then bake it. They are so big and rich, that most of the time, we split a half of one.
