I have had a few of those as well:
1. When I dropped Physics 1 in summer and picked it up in the fall, the head of the Physics was the teacher, that is usually not a good thing, but this was an exception. This man was born to be a teacher, caring (whether teaching a 300 seat intro or a 10 seat specialized,) able to explain things well with good examples, and just brilliant! I took all of my physics courses with him.
2. The instructor for Statics. Not the most touchy feeling guy, but ingrained in me how to approach problem solving. All of my other professors commented on my well thought out drawings and steps after that.
3. My 1st, 2nd, and 3rd grade teachers. All were loving, kind people that realized I needed to be challenged and did their very best to keep me from getting bored.
